WINE TYPE: Brut Sparkling Wine – Charmat Method
PRODUCTION AREA: The wine is produced in the hilly territory of the municipality of San Gimignano, in the province of Siena. The soils are of Pliocene origin, while the vineyards are planted on tuffaceous and clay-rich soils.
GRAPE VARIETY: San Colombano 100%
PRODUCTION – WINEMAKING: The grapes are harvested at optimal ripeness and gently pressed. The resulting must undergoes fermentation at a controlled temperature in stainless steel tanks to produce the base wine. The wine is then transferred to pressurized stainless steel tanks (autoclaves), where the second fermentation takes place through the addition of selected yeasts and sugars (the sparkling process). During this stage, carbon dioxide is naturally produced, giving the wine its characteristic effervescence. After aging on fine lees, the wine is isobarically filtered and bottled, preserving its pressure, freshness, and aromatic intensity.
TASTING NOTES:
Color: Bright straw yellow with greenish highlights; fine and persistent perlage.
Aroma: Fresh and fragrant, with floral and fruity notes reminiscent of white flowers, green apple, pear, citrus fruits, and white-fleshed fruits.
Palate: Fresh, harmonious, and pleasantly savory, with lively acidity, delicate bubbles, and a persistent finish.
Alcohol Content: 12%
Food Pairings: Ideal as an aperitif. It pairs perfectly with finger foods, light appetizers, shellfish, seafood, sushi, raw fish, fried seafood, delicate risottos, vegetables, and fresh cheeses. It is also an excellent choice for celebrations, special occasions, and toasts.
Serving Temperature: 6–8°C (43–46°F).
